Different Cuts of Vegetables

 

 

Julienne(Strips)


Cut vegetables into 4 cms lengths. Cut lengths into thin slices.

Then cut slices into thin strips.



Brunoise(Small dice)


Cut vegetables into conveniently sliced lengths.

Cut lengths into1.5mm slices.Cut slices into 1.5 mm strips.

Cut strips into 1.5 mm squares.


Macedoine(0.7 cm dice)


Cut vegetables into conveniently sliced lengths.

Cut lengths into 7mm slices.Cut slices into 7mm strips.Cut strips into 7 mm squares.

Jardiniere 


Cut vegetables into 2 cm lengths.

Cut lengths into 3.5 mm slices.

Cut slices into thick stick of  3.5mm ,3.5mm,2mm


Chiffonade

Cut into fine slices or shredded green leafy vegetables , usually spinach or lettuce.


Mirepoix

Usually a mixture of roughly chopped

 vegetables.Example:Onion,Celeery, and carrot.


Paysanne


Various thin shaped such as triangles,circles,squares or half rounds.

In order to cut economically , the shape of the vegetable decides which shape to choose.

All are sliced thinly about 1-2 mm thick.
